Trident hotel owner Michael Lee Chin is determined that every aspect of the property should meet and exceed a guest's expectations. To this end and ably assisted by Geejam Collection director, Jon Baker, the culinary team at MIKE'S Supper Club is functioning under the watchful eyes of master sushi chef Hisashi Iwata. Chef Iwata, who hails from Kobe, Japan, and who has tantalised palates at Nick Haque KOI restaurants in New York, and Los Angeles — and opened sushi bars all over Bangkok, is happy to add Trident Hotel, Port Antonio, to his already impressive repertoire.
