When a colleague at work shared how delicious the pumpkin seed butter was, we went in search not only of the product but the brains behind it. Educator Cheryl Holdsworth was in the middle of bottling not only pumpkin butter but almond butter, too. "I'm passionate about eating healthy," she shared.
She took an interest in creating her own nut butters after observing that many other similar products were full of preservatives and bottled in plastic containers. In addition, a few of the "all-natural ones were either too thick (not spreadable) or very expensive". The long summer holidays allowed Holdsworth sufficient time to test the product, which got rave reviews from the many tasters. "I tried the peanut butter first, and then did some research and decided to try other nut butters like cashew and my favourite, the almond." Pumpkin seed came as a result of Holdsworth's discovery that the humble fruit was loaded with a myriad of health benefits. Pumpkin seeds are said to be the most alkaline-forming seed, loaded with zinc, magnesium, manganese and phosphorous. "I'd like to target Jamaican men in particular with the pumpkin seed butters because they have the highest incidence of prostate cancer in the world, and pumpkin seeds are very beneficial for prostate health. Pumpkin seed butter is believed to alleviate difficult urination -- the result of an enlarged prostate." The nut and seed butters are all-natural and sweetened with pure Jamaican honey or maple syrup and can be used in the same way one would use peanut butter, regular dairy butter or a spread on bread, crackers, bammies, as a dip, topping for pancakes, in smoothies, shakes or as a substitute for dairy butter in some recipes.
Bureau of Standards approval is in the works for this great, two-week-old new food idea that's already in great demand.
