With the excitement around Celine Dion at this year's staging of the Jamaica Jazz and Blues Festival, a number of sponsors were organising different tributes to celebrate her presence. Platinum Sponsor Flow reached out to me to assist them to create a special sparkling wine cocktail for guests of their skybox on the Friday night that Celine performed.
We called the drink "Celini", inspired by the simplicity of a Bellini and the grace and elegance of Celine Dion. A Bellini is a mixture of sparkling wine (traditionally prosecco) and peach purée often served at celebrations. It is one of Italy's most popular cocktails.
Recipe - The Celini is two parts Santa Margherita Prosecco and one part Pure Country Cherry Juice; serve in a standard champagne flute garnish with a cherry in the glass.
The Celini was a hit and kept bar staff on their toes to keep up with the demand.
