Today we start a weekly summer series of easy, healthy recipes any busy parent can prepare. Not only are they easy, your kids will love them.

Here's how to make bacon baskets.


This is a fun way to get kids involved in the kitchen. Ask them to assemble the bacon or teach them to crack an egg. It's super easy and who doesn't love eating art for breakfast?

Prep time: 5 minutes

Cook time: 15 minutes

Serves: 2

What you'll need

8 slices Caribbean Passion bacon

2 eggs

Salt and pepper to taste

How to make it

1. Preheat oven to 500F and adjust oven rack to the middle of the oven.

2. Place four slices of bacon crosswise in a muffin tin and place in oven for five minutes to render fat

3. Whip eggs and add salt and pepper to taste and pour into each bacon pocket

4. Bake for another 10 minutes. Enjoy!
