With the summer heat upon us, many adults and children are reaching for fruity and refreshing beverages to lower their body temperature a notch or two. Richard Jamieson, bartender at the award-winning Beaches Negril family resort, shares some of his signature cocktails, guaranteed to beat the heat and help set the perfect tone for social gatherings.

GREEN DAY

Ingredients

1oz lime juice

4oz orange juice

1oz mango mix

1oz blue food colouring

Method

Combine lime juice, orange juice and mango mix in a shaker and shake well with ice. Pour into an 8oz highball glass. Pour all blue food colouring on top and serve. Serves one.

ABSOLUT COLLISION

Ingredients

1oz Absolut Raspberry (optional flavour)

1oz simple syrup

1oz lime juice

1oz water

1oz blackberry brandy

1oz piña colada

Method

Combine Absolut Raspberry, simple syrup, lime juice, water and blackberry brandy in a shaker. Shake well with ice and pour into martini glass. Add piña colada on top, garnish with cherry and serve. Serves one.

JUNGLE TEMPTATIONS

Ingredients

2oz apple juice

2oz orange juice

2oz pineapple juice

1oz mango mix

1/2 ripe banana

6 ice cubes

Method

Blend apple juice, orange juice, pineapple juice, mango mix, banana and ice. Garnish with pineapple and cherry and serve. Serves one.

GRAPEFRUIT EXPECTATIONS

Ingredients

1oz grapefruit vodka

4oz cranberry juice

1oz grapefruit juice

1 oz ginger ale

Method

Combine grapefruit vodka, cranberry juice, grapefruit juice and ginger ale in a cocktail shaker and shake well with ice. Garnish with a slice of grapefruit and serve. Serves one.
