Master pastry chef Jing Shi and his Ocho Rios Future Bakery enterprise have once again added style and innovation to the culinary arts — this time, with bread.

The Jamaica Observer Food Awards 2011 Dessert Chef of the Year, began this week to distribute his company's new line of breads, which are infused with local produce.

Jing Shi's new bread line includes plantain bread, ciabatta bread (Italian), multigrain bread (a mixture of sunflower seeds, sesame seeds, oats and kernel), pumpkin bread, yam bread, coconut-pineapple bread, cassava bread and sweet potato bread.

"We're always looking for new and innovative things with food. In fact, every year we try to come up with different items to introduce to the market. This year we chose to do bread," Jing Shi told Thursday Food. "The idea behind it all is to utilise different locally produced goods and to show how versatile they can be, especially in our everyday lives," the chef continued.

Although the bread is not available on supermarket shelves, Jing Shi told Thursday Food that the bakery will distribute to restaurants and hotels across the island. "So far the demand has been tremendous; our customers enjoy the idea of bread being blended with local produce, and we're hoping this continues as we try to build brand Jamaica."
