Terra Nova Christmas Cake

The recipe for this easy to bake, delicious Christmas cake comes to you courtesy of the Terra All-Suite hotel.

Christmas Cake

Ingredients

1lb flour

1/2 pound breadcrumbs

3 pounds mixed fruit

10 Eggs

1lb brown sugar

1lb butter

2 cups Red Label wine

1/2 cup white rum

2 teaspoons vanilla

2 teaspoons almond flavouring

2 teaspoons baking powder

Browning (to preference)

Method:

Prepare fruit as usual for fruit cake, i.e. boil in wine and pour rum over

hot mixed fruits. Allow to cool.

Sift flour and breadcrumbs together, set aside

Cream sugar and butter together. Add eggs one at a time

Add dry ingredients along with the liquids. Fold in mixed fruit

Pour into 10" pan/s, place into a larger pan with 1/2" water and bake at 275oF

for 2 - 2 1/2 hours until toothpick inserted in centre comes up clean.

Decorate with fondant and marzipan decorations (optional)
