Applaud It! Finale with Jamaica Broilers

The 2018 Applaud It! series ended on a high note on Tuesday, November 20 when the Jamaica Broilers Group hosted 10 male students from nearby Innswood High School. Chef and culinary whiz Jacqui Tyson created a lovely four-course menu that celebrated Jamaica Broilers products and allowed the young men to practise fine dining skills. After all, Applaud It! is an annual “initiative that provides a unique opportunity for industry leaders to meet the next generation exactly where they are at and guide them through an awesome experience that exposes them to social and dining skills”.

The meal began with a dish called the Nest. Chef Tyson cheekily described this as “the beginning”, for present within the dish was the eternal riddle “which came first: the chicken or the egg?” The dish was a local interpretation of ramen and combined fresh noodles, corn, a slice of Hamilton's Smokehouse smoked chicken, a hard boiled egg and chicken consommé to make for a delicious starter. Always conscious about how flavours land on the palate, Chef Tyson followed the appetiser with a palate cleanser. Simple yet effective, the shot glasses of watermelon, grapes and lemongrass were bright, refreshing and did the job of clearing the palate in preparation for the show-stopping main course.

Guests delighted in the Best Dressed Bleu — three different preparations of chicken that were all delicious. The dish comprised chicken breast stuffed with callaloo, a deboned thigh stuffed with Hamilton's Smokehouse ham, pineapple and cheese; and a deboned wing stuffed with ground chicken. The delicious main was rounded out by sautéed tri-colour bell peppers and baby carrots. The meal was finished with squares of decadent cheesecake enrobed in chocolate and topped with strawberries and shards of candied Hamilton's Smokehouse ham.

The luncheon was an opportunity for a few male Jamaica Broilers executives to break bread with young men from the community. These youngsters need as many positive male figures as they are able to get. The Applaud It! lunch allowed them to experience a first-rate meal, and discover that being well-rounded is indeed part of manhood.
