1 oz home-made sweet vermouth

4 dashes grapefruit bitters

1 oz Campari

Garnish with flame rum tamarind balls

Ingredients:

2 oz Johnnie Walker Black

2 oz egg fruit liqueur

3 dashes home-made bitters

1 oz sweet vermouth

Garnish with flamed orange peel

Ingredients:

3 oz home-made Jamaica sorrel

5 leaves basil

3 slices lime

3 slices orange

1 oz simple syrup

Garnish with basil

1 piece lemongrass stick

1/2 lime

1/2 oz home-made lemongrass syrup

2 oz Johnnie Walker Black

1 oz home-made coconut milk

Garnish with orange peel

Ingredients:

1 oz Vodka

1/2 oz Apple Vodka

1/2 oz Apple sour

1 1/2 oz pineapple juice

1 oz pineapple syrup

2 drops ginger extract

NB: The Observer Bird was paired with a sweet and sour shrimp

Ingredients:

1 oz Johnnie Walker Black

1 oz rosemary syrup

2 drops ginger extract

2 drops Scotch Bonnet bitters

1 oz passion fruit

1/2 oz Myers's rum

1/2 oz Amaretto

Smoked apple wood

Top with ginger beer soda

1 oz coffee liqueur

2 cubes brown suagr

Top with coconut cocoa foam and coconut flakes
