Huber's ackee rice

Ingredients

* 1/4 cabbage

* 1 stalk escallion

* 2 carrots

* 1 medium sweet potato (sliced)

* 4 stalks callaloo

* 1 onion

* 4 pegs garlic

* 1/4 pound seasoned tofu

* 1/3 dried coconut

* 2 fingers tumeric

* 2 cups rice

* 4 cups water

* Dried herbs to taste

Method

* Season tofu with dried herbs

* Shred cabbage, escallion, carrot, onion and garlic and place in medium-sized pot with a little water

* Warm slightly and add rice and cover with water

* Add sweet potato and callaloo in layers

* Squeeze milk from coconut and juice from tumeric

* Add to pot with tofu and marinate for 15 mniutes or till done
