Moira Morgan – Founder, The Griffin Charitable Trust
Moira Morgan spends her days working with colleagues in the Peace Management Initiative, providing support to victims of war-torn communities.
It’s fulfilling work for this “Irishwoman by birth, Jamaican by persuasion and social worker by vocation”.
For over eight years, the Jamaica Pegasus has been her special retreat and their cornmeal porridge and the chocolate fudge cake are her “Best Kept Secrets”.
She says “I always look for an excuse to carry visitors to the Pegasus for breakfast, just for the porridge — it’s so rich and creamy. My other favourite is the chocolate fudge cake. It is moist and chocolatey — the perfect accompaniment to an afternoon “girlie chit-chat”.
