Beach Chic & Exquisite Eats

You’ll forgive us for preening just a tad, but how could we not wake you up this Sunday morning with highlights of an amazing dinner party executed perfectly by our chef of the year Stephen Sowa and his team Tuesday last, for our Food Awards judges on the calm Oleander beach of the gorgeous Half Moon Resort.

The setting: an elegant table, billowing drapes, powdered sand beneath our feet… was idyllic; the service flawless, and the fare impressive: Asian-Caribbean fusion, from the marinated ahi tuna, to the conch and coconut noodle soup and lemongrass duck leg confit to dessert: a study of mango by executive pastry chef Wouter Tjeertes. To say that we’ll long remember this evening would be an understatement.

Pimento-smoked duck breast, lemongrass duck leg confit, Jasmine rice andfresh gungo beans with fresh island vegetables.
A study of mango: warm mango Sriracha strudel; mango mousse on whitechocolate crumble, mango and Granny Smith compote infused with Tahiti vanillaon coconut Napoleon, mango star anise sorbet, mango cardamom sauce.
