A taste of Team Jamaica

THE Culinary Federation of Jamaica held their most recent practice session for Team Jamaica at the GraceKennedy corporate office in Montego Bay last week, as they prepare for the Taste of the Caribbean competition set for June at the Hyatt Regency in Miami, Florida.

At the session members of the team prepared their dishes, which will be entered at the competition, for feedback from guests, sponsor representatives and other members of the culinary federation.

We bring you highlights:

 

 

Penne pasta stuffed with thyme-infused seafood mousse, citrussalsa drizzled with Jamaican spice glaze.
Dill and cilantro marinatedblue marlin with tartar, redpeppers and cantaloupe salsa
Saltfish and callaloo-stuffed chicken roulade with herb cracker,crusted green banana and potato cake.
