Recipe Corner – Grandma’s Fruit Cake

Grandma’s Fruit Cake

Ingredients:
10 oz butter
10 oz granulated sugar
3 tbsp browning
2 tsp vanilla
1/2 tsp almond extract
1 tbsp lime zest

6 eggs (whole)

1/2 cups all-purpose flour
1 tsp cinnamon
1 tsp nutmeg
2 tsp salt
1 tsp baking powder

11/2 lbs raisins
10 oz prunes
4 oz mixed peel
8 oz cherries
1 cup Red Label Wine
1/2 cup Wray & Nephew white rum
Use blender to puree until slightly chunky
(For best results, soak fruits for 1-2 weeks or longer)

Cream butter, sugar and browning until soft and fluffy. Add vanilla and lime zest.
Fold in eggs two at a time.
Add pureed fruits.
Sieve together dried ingredients and add to the egg mixture until completely incorporated.
Pour mixture into greased and floured 9” round cake pan.
Bake at 350F for 1 hour and 15 minutes or until done.

1lb icing sugar
1/2 cup condensed milk
tbsp lime zest
2 tbp dark rum
1 tbsp evaporated milk
Mix all the ingredients together until smooth.
