COCONUT CURRY FISH
Ingredients:
½lb fish
1 onion
Stalk of scallion
Sprig of thyme
1 large carrot
3 okras
1 tomato
1 tablespoon of curry powder
1 tablespoon of butter
Pinch of salt
Pinch of black pepper
3 cloves of garlic
½ cup of coconut milk
½ cup of water
Method:
Rub fish with black pepper and salt.
Chop onion, thyme, carrot and escallion.
Add butter to saucepan until butter melts, then add chopped seasonings and sautée for two minutes.
Add curry powder and let cook until colour changes slightly, then add water, coconut milk and cook for two minutes.
Then add fish and cook for 7-10 minutes.
