Emancifest Cook-Off
Large crowds, tantalising dishes and credible performances from Jamaica’s top gospel and reggae acts were some of the memorable moments of this year’s Emancifest. The annual event presented by the Sligoville Heritage Foundation commemorates Jamaica’s Emancipation Day and is one of the most highly anticipated events during the Emanci-pendence period. How appropriate for it to take place in Jamaica’s first free village Sligoville! Perhaps the highlight of the event for many was the celebrity cook off.
A star-studded line-up of chefs, including Ready TV CEO Chris Dehring, head coach of Jamaica’s IAAF World Championships team Maurice Wilson and attorney-at-law Valerie Neita Robertson, presented their respective dishes in hopes of capturing the title. Dehring emerged on top copping the title by way of his Wicked Ackee and Salt fish. Dehring’s Wicked Ackee and Salt Fish, which wowed the panel of judges, including Member of Parliament for Saint Ann SE Lisa Hanna. The panel unanimously declared Dehring the winner. On hand to share in the success was his sous-chef daughter Shiloh.
Patriot Dehring told Thursday Food that his meal inspiration was an ode to Emancipation Day and those who fought relentlessly for the rights Jamaicans now enjoy. “This isn’t the regular ackee and salt fish; this is a wicked ackee and salt fish. It’s our national dish and it’s only right to prepare this dish on this day, Emancipation Day, a day we look forward to every year. We get to reflect on how far we have come, and are given an opportunity to celebrate and honour those who helped us accomplish this great feat,” he said.
Performances by reggae artist Vershon, I Wayne and Sanchez, to name a few, topped off the event. Dehring shares his recipe exclusively with Thursday Food:
