Summer’s Last Stand: A Guide to Perfect Backyard BBQs

Now that you’ve mastered the basics, you’ve earned the right to avoid common grilling pitfalls. Resist the urge to overcrowd your grill, which hinders even cooking and can lead to steaming instead of searing. Give your meats and veggies plenty of space to breathe and develop a beautiful char. While it may be tempting to flip your food constantly, exercise restraint. A single flip is often sufficient for burgers and chicken, allowing a delicious crust to form. When it comes to adding sauces, timing is critical. Apply sugary barbecue sauces or glazes towards the end of grilling to prevent them from burning and creating a bitter taste. And remember, always complete the preheating step. Starting with a cold grill can lead to sticking and uneven cooking, so take the extra time to ensure your grill is heated correctly before you begin.

Remember your veggie lovers! Grill up peppers, onions and zucchini skewers for a healthy side dish. When assembling your burgers, choose high-quality buns that can hold up to juicy patties and toppings. For an extra touch, lightly toast them on the grill for enhanced texture and flavour.

If you want to take your grilling skills to the next level, consider experimenting with wood chips for an added layer of smoky complexity. “Get creative with your marinades and explore a variety of flavour profiles, from classic citrus herbs to exotic teriyaki or spicy Scotch bonnet lime. The joy of grilling is in the experimentation, so don’t be afraid to try something new,” says Oliver.

With these tips and tricks in your arsenal, you’ll be well on your way to becoming a backyard barbecue hero. So, call in the crew, fire up the grill, and take on the summer vibe.
