Happy Valentine’s Day!

Together Forever Dragon Stout Cheesecake 

Ingredients:

1/2lb cream cheese

2eggs

1/2cup heavy cream

4oz sugar

2oz cornstarch

1 cup Dragon stout

Method:

Cream cheese and sugar then add eggs, heavy cream, dissolve corn starch and add to mixture, then Dragon stout.

Bake at 200 degrees in a steam bath for one hour

Chocolate Wet Kisses 

Ingredients:

12 Strawberries

1lb Melted dark chocolate

1/4 lb white chocolate

Method:

Dip strawberries half way with dark chocolate, place on bamboo skewers to dry.

Place white chocolate in a piping bag then drizzle over strawberries to decorate.

Match Made In Heaven 

Jerked chicken breast stuffed with caramelised pineapple

Ingredients:

1 Chicken breast

3oz diced pineapple

1tsp brown sugar

1/2 tsp grated ginger

1tsp Jerk seasoning

1/2 cup chopped callaloo (blanched)

1tsp olive oil

Method:

Place pineapple in a very hot sauté pan with sugar and ginger, cook until caramelised or golden brown in colour. Tenderise chicken breast with meat mallet, season and fill with callaloo and caramelised pineapple, secure with a trussing cord and place on a charcoal grill for 15-20 mins. When finished, slice and serve with jerk sauce and blanched vegetables.

Perfect Partners 

Surf and turf using grilled crayfish and minute steak

Ingredients:

1 crayfish (cut in a half lengthwise and clean)

4oz steak

1oz seafood spice

1oz meat seasoning

1/4 cup olive oil

2 stalks escallion (chopped)

2 sprigs thyme (remove leaves only)

1tsp salt and pepper

Method:

Season steak and crayfish with salt and pepper. Mix seafood in one bowl and meat seasoning in the other with salt and pepper, thyme, olive oil and scallion.

Place crayfish and steak in their marinades, cover and place in fridge for half an hour.

Remove and grill steak medium along with crayfish over a charcoal grill and serve.
