Lumley takes Flight!
Chef Brian Lumley is the featured chef in Caribbean Airlines Business Class
When Caribbean Airlines went looking for chefs to add dazzle to its Business Class menus, one of the first to receive the call was Jamaica’s own Brian Lumley. “Food is one of the Caribbean’s most important signatures and by using the talents of the best chefs, we are not only delivering a great experience to our Business Class guests, but we are also supporting the chefs in engaging people outside of their restaurants,” said Patricia Nurse-Ramsay, executive manager, inflight/catering.
Lumley’s entrée of grilled salmon with watermelon chutney served with red pepper coulis, broccoli mashed potatoes and sautéed yellow squash and green beans will be served in Caribbean Airlines Business Class through to the end of December. He joins Chef Debra Sardinha-Metivier as the featured chefs for the period. Chef Sardinha-Metivier of Trinidad’s Blue Crab restaurant has chosen Tobago Coco Rubbed Beef Filet as her offering. Lumley and Sardinah-Metvier follow chefs Hasan DeFour and Khalid Mohammed whose entrees were served on board during September and October.
In developing his entrée, Chef Lumley had to overcome some peculiar challenges “I had to consider choosing ingredients and methods of cooking that would maintain flavour integrity from the kitchen to the time each passenger is served,” said Lumley.
Lumley relishes the opportunity to serve his signature entrée. He says, “I can’t begin to express the immense pride of being selected to work with Caribbean Airlines in this capacity.”
