Video: Christmas At The Palace

From London to Bermuda and a few stops in between, Executive Chef Dennis McIntosh is the man who helms the culinary programme at Moon Palace Jamaica Grande Resorts, Ocho Rios.

There’s a ton of marble within the Palace walls! Can the food possibly compete?

Thursday Life takes the tour… “We have three restaurants,” shares McIntosh, who’s also the President of the Culinary Federation of Jamaica, “Momo, Oriental; Pier 8, seafood; and La Gondola, Italian.” It’s hard to miss the really well-appointed, three-meal-a-day Buccaneers Reef where breakfast, lunch and dinner are served.

“There are four hot action stations where we are able to deliver world-class cuisine in full view of our guests allowing them to see, touch and smell the products we make and marvel at the creativity of our cooks”.

With McIntosh at the helm, the impressive culinary offerings naturally include Jamaican. “We embrace the cuisine of Jamaica and are eager to tantalise the palates of our guests with fresh, local favourites drizzled with tales of our rich culinary history matched with the creativity of the 111-strong culinary team”.

Eschew all thoughts of one-size fits all. Guests with gluten free requirements are as welcome as those able to have it all. “We are aware of eating trends and make provisions for guests who require gluten-free options — meats, breads, desserts, etc, along with our exclusive line that offers fresh local fruits and vegetables from our raw bar. Those who wish to eat healthy have a lot to choose from.” Indeed they do and, with Christmas a mere week away, there’s reason enough to check into the Palace and be pampered by Chef McIntosh and his team. That’s one amazing option; another is to take inspiration from his impressive festive table and create your own.
