Handmade with love
“It’s elementary, really,” was chocolatier Mahek Chatani’s response to the question posed by Thursday Life, as to why choose Mobay Chocolate Company (MCC) this Valentine’s Day?
“Artisan chocolatiers who produce fresh chocolate with a seven-to-eight week shelf life cannot expand their businesses into a national market without changing their recipes and formulas. The chocolates are no longer fresh! The challenge is that for chocolatiers to expand, they need shelf-stable recipes. This means using more sugar and sugar additives to prolong the shelf life. The result — chocolate can become too sweet.”
“Making chocolate might seem simple to the average eye,” continued Chatani. “But it is actually pretty complicated, time-consuming and expensive. The key to delectable chocolate is in the use of the best ingredients, namely cacao without preservatives.
“Our goal at MCC is to create beautiful, fresh, handmade artisan chocolates without stabilising ingredients.”
