Hamilton’s Smokehouse Backyard-Friendly Grill-Off
The grills were heated this Father’s Day when grill master Craig Powell and Orrett “ZJ Bambino” Hart participated in the Hamilton’s Smokehouse Backyard-friendly Grill-off. The dads focused on bringing flavours alive with carefully crafted dishes featuring Hamilton’s Smokehouse sausages. Hart set ablaze the grill with his own “Bim-style” BimAlfredoMato Hamilton’s Smokehouse jerk sausage pasta, bimschabarbs and garlic bimbread, while Powell showed off his skills with a Dirty South Chilli with Hamilton’s Smoked Sausages on top of a bed of white rice. Thursday Food was backyard.
Craig Powell’s Dirty South Chilli with Hamilton’s Smoked Sausages
Ingredients:
1lb ground beef
1 (16oz) can tomato sauce
1 (16oz) can diced tomatoes
1 (8oz) can tomato paste
1 (16oz) can red kidney beans
1 (16oz) can black beans
2 large finely diced onions
2 finely diced celery stems
1 large finely diced sweet pepper
4 cloves garlic
1 tbsp cumin
1 tsp cinnamon
2-3 tbsp chilli powder
Salt and pepper to taste
Method:
• Brown mince and set aside.
• Add onions, garlic, sweet pepper and celery to
sauce pan and sauté until well cooked.
• Add mince to sauté and stir together.
• Add cumin, cinnamon and chilli powder and
cook on med for 20 minutes.
• Add black bean and red kidney beans, as well as
diced tomatoes, tomato sauce and paste. Allow
to simmer for 45 minutes on low heat (stirring
occasionally).
• Serve over white rice with cheese on top.
ZJ Bambino’s BimAlfredoMato Jerk Sausage Pasta
Ingredients:
1 pack Hamilton’s Jerk Sausages
1 bottle Alfredo sauce
1 tbsp tomato paste
1 tomato
3 cloves of garlic
2 stalks escallion
½ tsp Scotch bonnet
1 lb fettuccine pasta
Method:
• Dice or chop onion, garlic, escallion, tomato, and
Scotch bonnet (if desired)
• Bring pot of water to a boil and add fettuccine
pasta, cook for 7 minutes and drain.
• Grill two Hamilton’s Jerk Sausages until brown.
• In saucepan heat oil and add seasoning, then sauté.
• Add Alfredo Sauce and two tablespoons of tomato
paste.
• Mix and simmer for a few minutes.
• Drain pasta and add to sauce mixture.
• Slice sausages to desired thickness and add to
pasta mixture.
• Take pot off grill so it no bun up. BIM!
