Easy, delicious kebabs
Let’s face it, kebabs are delicious and easy to prepare. Layers of juicy, tender pieces of flavourful marinated meat interspersed with colourful tender veggies is a meal the whole family can agree on! Yes, the traditional meat on stick recipes are tried and true, but take things to another level with these easy ideas.
Herbed Scallop Kebabs
This dish is so easy to prepare you need to keep a constant eye or the scallops can overcook. A light citrus and herb marinade is the best bet — get creative! Whether you use orange, lime or lemon, the citrus allows the sweet, succulent flavour of the scallops to shine.
Spicy Lamb Kebabs with Garlic Yoghurt
Lamb for dinner in the middle of the week? Yes, why not! These lamb kebabs are a cinch to prepare. The key is to ensure the pieces are roughly the same size to ensure even cooking. Not to worry, your family-friendly butcher can easily do this for you. Use cumin, Scotch bonnet peppers, lemon zest, salt and pepper to season. When they are ready, serve with Greek yoghurt seasoned with grated garlic and lemon juice. Yum!
Steak Taco on a Stick
Flex your culinary muscles with this deconstructed taco — on a stick! Start with cubes of sirloin marinated in a mixture of jalapenos, cilantro and cumin. Place on skewers with rounds of corn, pieces of avocado, onion, and bell peppers. You’ll never miss the taco shell.
Spiced Salmon Kebabs
May we suggest using the Private Label by Gregory Burrowes salmon seasoning blend to coat the cubes of salmon. Place on skewers (because salmon cooks quickly, best to not layer with veggies) and grill or pop in the oven. And you’ll have a Lenten meal ready in no time.
Short Rib Kebabs
Who would have guessed that short ribs could make kebabs? When short ribs are grilled, they become intensely beefy and have delicious crispy bits. Start with boneless short ribs and season according to your preference. Hot tip: an Asian marinade works very well.
Classic Steak Kebabs
We could never leave out the classic! You can include the kids with the preparation of these and think of beautiful coloured veggies punctuating the tender, juicy beef. You really can’t go wrong.
Cajun Shrimp Kebabs
Shrimp is another tried and true option for skewers. Channel the flavours of New Orleans
with this recipe and delight the entire family.
Ingredients:
1 lb shrimp
2 tbsp olive oil
1 tsp kosher salt
1 tsp cayenne
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
2 lemons, sliced thinly
crosswise
Method:
Preheat grill to medium-high. Make Cajun spice mix. Combine salt, cayenne, paprika, garlic powder, onion powder and oregano in a small bowl. Stir with a fork until evenly combined. In a medium bowl, toss shrimp in olive oil. Add spice mix and toss shrimp until its evenly coated. Thread shrimp and lemon onto metal skewers (or wooden skewers that have been soaked for 20 minutes). Grill skewers until shrimp is opaque and lemon is charred, about 4-5 minutes total, flipping once halfway.
