RECIPE CORNER… Comfort Fare By Delect

Dive into Creamy Comfort: Delect Coconut Cream of Pumpkin Soup

This summer, delight your taste buds with a bowl of Delect’s irresistible Coconut Cream of Pumpkin Soup! Made with Delect Coconut Milk and Powder, this velvety smooth soup is filled with flavour and warmth. Ready in just 30 minutes, it’s the perfect dish for any summer gathering. Let’s get cooking and make this season delicious!

 

Total time: 30 minutes

Ingredients:

3lb or 6 cups cooked pumpkin

2 cans Delect Coconut Milk

2 packs of Delect Coconut Milk Powder (50g)

½ teaspoon Spicy Hill Scotch Bonnet Pepper Powder

3 tablespoons Golden Brand Margarine

3 tablespoons ginger, finely grated

½ cup celery, finely chopped

3 tablespoons garlic, finely chopped

½ cup onions, finely chopped

½ teaspoon nutmeg

1 sprig of thyme

2 teaspoons all-purpose seasoning

Salt to taste

Pepper to taste

 

Method:

Cook pumpkin in salted water until tender.

Place the pumpkin in a food processor or mash it with two packs of Delect Coconut Milk Powder using the pumpkin cooking liquid.

Melt the Golden Brand Margarine in pot and sauté celery, garlic, ginger, garlic, onions and thyme until wilted.

Add flour to form a paste and mix vigorously for 3-5 minutes.

Add Delect (can) Coconut Milk and mix until fully dissolved, let simmer for 2 minutes.

Add Spicy Hill Scotch Bonnet Pepper Powder and nutmeg.

Add pumpkin/coconut purée and simmer on low heat for 10 minutes. Adjust salt to taste.

Serve with warm garlic bread and a tossed salad.

Coconut Comfort: Delect Coconut Curried Chicken Pie

Summer calls for comfort food with a kick! Treat yourself to a delightful Coconut Curried Chicken Pie. Delect’s coconut milk adds a creamy twist to this classic comfort food, packed with tender chicken, colourful veggies, and a warming curry spice blend. With Delect’s coconut milk, this dish gains a touch of richness and depth, making it a guaranteed crowd-pleaser for any summer occasion.

 

Pastry ingredients:

2 cups all-purpose flour

⅗ cup Golden Brand Margarine

¼ teaspoon salt

3 tablespoons cold water

 

Method:

Cut margarine into small pieces and blend with salt into flour until it resembles breadcrumbs.

Gradually add water and mix until dough forms.

Cover with plastic wrap and rest in the fridge for at least 30 minutes.

Divide in two and roll out one piece to fit in a pie dish and place the rest in the fridge.

 

Total time: Approx 40 minutes

 

Coconut Curried Chicken filling ingredients:

1lb boneless chicken thigh, cut into small pieces

1 can Delect coconut milk

⅛ – ¼ teaspoon Spicy Hill Scotch Bonnet pepper powder

2 tablespoons curry powder

1 ½ tablespoons garlic, chopped

1 sprig of thyme

Dash of all-spice powder

1 cup onion

½ cup sweet pepper

1 cup cooked Irish potato, diced

½ cup mixed vegetables

1 tablespoon cornstarch mixed with water

 

Method:

Season boneless chicken thigh pieces with salt and black pepper.

Heat oil and add curry powder, garlic, thyme, and a dash of allspice.

Add Spicy Hill Scotch Bonnet Pepper powder.

Add chicken and cook for at least 15 minutes.

Add onions and sweet peppers, adjusting seasonings to taste.

Pour in Delect Coconut Milk and simmer for 5-10 minutes, then mix in cornstarch with warm water and let cool.

Pour cooled mixture into an unbaked pie shell and add cooled potatoes.

Roll out the other half of the dough, wet edges with water, and place on top, sealing edges by crimping with fingertips and fork.

Brush with egg wash (one beaten egg with ½ cup water).

Bake at 350-360°F for approximately 20-25 mins or until golden brown.

 

Total time: 1 hour

 

Allow to cool and serve with a tossed salad

Ingredients:

4 oz Delect Coconut Milk

¼ cup Delect Homemade Lemonade Concentrate

1 oz white rum

Dash of nutmeg

Ice

 

Method:

Pour rum into a glass.

Add Delect Homemade Lemonade Concentrate.

Add Delect Coconut Milk.

Sprinkle nutmeg.

Stir well.

Serve over ice and garnish to your liking.
