Ace the School Rush: Franks Make Fast, Fun Meals

The school year’s start brings a familiar frenzy to mornings. Nine-year-old Joshua Chaplain scrambles to gather his homework while his mom, Christen, expertly watches both the skillet and the clock, timing their departure to the minute. Across town, Lathanya Brown orchestrates a symphony of breakfast, lunch-packing, and backpack checks for her daughter, Drei-Anah. For countless parents, this chaotic multitasking is the daily norm. But imagine a world where school mornings are calmer, more connected – less a frantic race and more a shared, enjoyable ritual.

Effortless Breakfasts and Lunches: Conquering the School Morning Rush!

Preparing meals for kids can be a challenge, needing to balance nutrition and taste. Here are practical tips to create energising breakfasts and delicious lunches, keeping your children fuelled and happy throughout the school day.

Simplify Your Mornings, Energise Your Kids:

Plan: Dedicate time each weekend to plan meals for the week. This saves time and ensures you have all necessary ingredients. Create a rotating menu of favourites for simplicity.

Prep in Advance: The night before, cut fruits, wash vegetables, and portion snacks. This allows for quick grab-and-go options. Pre-cook breakfast items like pancakes or muffins for easy reheating.

Keep it Simple and Fun: Kids love colourful, engaging meals. Incorporate a mix of proteins, vegetables, and fruits for balance.

Quick and Tasty Breakfasts: Mornings are hectic, but a good breakfast is vital. The Reggae Jammin Chicken Frankfurter Omelette is a perfect solution – fast, packed with protein and flavour, and sure to please picky eaters.

• Salt and pepper to taste

• Oil for cooking

Method:

• Heat oil in a large frying pan over medium heat.

• Add potatoes and cook until browned and slightly softened.

• Add chicken frankfurters, onion, and bell pepper. Cook until vegetables are softened.

Reggae Jammin Chicken Frankfurter Fried Rice

Ingredients:

• 2 Reggae Jammin Chicken Frankfurters, sliced into coins and halved

• 1 tbsp butter

• 1/2 onion, finely chopped

• 3 medium carrots, peeled and diced

• 1 garlic clove, minced

• 1 tbsp sesame oil

• 2 1/2 cups cooked white rice

• 2 eggs, lightly beaten

• 2/3 cup frozen peas

• 2 tbsp soy sauce

• 1 spring onion, thinly sliced

Method:

• Cook Reggae Jammin Chicken Frankfurters and the vegetables: Melt the butter in a large frying pan over medium heat. Add the onion, carrots, and chicken frankfurters. Cook until the onions become translucent, about 3-5 minutes. Add the garlic and cook until fragrant, about 1 minute.

• Add the Rice: Pour the sesame oil and let it heat for 1 minute. Add the cooked rice and stir well, cooking for about 3 minutes.

• Scramble the Eggs: Push the rice to one side of the pan. Add the beaten eggs to the empty side, scrambling them until fully cooked. Incorporate the scrambled eggs into the rice mixture.

• Finish the Dish: Add the frozen peas and soy sauce to the pan. Stir everything together until well combined and heated through.

• Garnish: Sprinkle with thinly sliced spring onion before serving.

Reggae Jammin Chicken Frankfurter Cups

• Butter or cooking spray for greasing

• Ketchup or mustard for serving (optional)

Method:

• Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with butter or cooking spray.

• Prepare the Bread Cups: Flatten each slice of white bread. Press each slice into the muffin tin, shaping them to form cups. Ensure the bread comes up the sides of the muffin cups.

• Add Reggae Jammin Frankfurter Slices: Place a few slices of chicken frankfurters into each bread cup.

• Mix the Egg Filling: In a small bowl, whisk together the eggs, milk, salt, and pepper.

• Pour the Filling: Pour the egg mixture over the chicken frankfurters in each bread cup, filling them about 3/4 full.

• Add Cheese (Optional): Sprinkle a little grated cheese on top of each cup if desired.

• Bake: Bake in the oven for 12-15 minutes or until the eggs are set and the bread is toasted.

• Serve: Remove the cups from the muffin tin and serve warm. Optionally, drizzle with ketchup or mustard before serving.

Remember, a little planning goes a long way in making school mornings less stressful and more enjoyable for everyone. By organising breakfasts and lunches ahead of time, you can ensure that your kids are well-nourished and ready to tackle the day ahead. So, let’s ditch the morning rush and embrace a stress-free back-to-school routine!
