Rainforest Sweet & Spicy Salmon Burger

Rainforest Sweet & Spicy Salmon Burger
Ingredients
2 Rainforest Salmon Burger Patties
1 tbsp oil
2 slices smoked mozzarella cheese
Toasted burger bun
2 leaves lettuce
1 sliced purple onion
For the Homemade Pickles
1 cup vinegar
2 tbsp white sugar
1 tsp salt
1/4 tsp red pepper flakes
1 tbsp finely chopped dill
1 cup sliced cucumber
For the Sweet and Spicy Garlic Mayonnaise
2 garlic cloves shredded
1 tbsp hot honey
2 tbsp mayonnaise
1/4 red bell pepper
1/4 green bell pepper
1/4 yellow bell pepper
Method
1. Dissolve salt and sugar in vinegar, add the dill, pepper flakes and cucumber slices then set aside.
2. Place the sweet bell pepper slices in a dry hot pan and blister on both sides. It should look and smell charred. Dice into fine cubes.
3. Mix together hot honey, mayonnaise, garlic and roasted peppers. Set aside in the refrigerator.
4. Add oil to a pan and fry the Rainforest salmon patties about 2 minutes per side over medium heat.
5. Place mozzarella cheese on top. Turn off the heat and allow it to melt for an additional 2 minutes.
6. Toast the burger buns then assemble sandwich with sweet and spicy garlic mayo, lettuce, cheesy salmon patties, more mayo, onions, pickles and lettuce.
