What to prepare to satiate those hunger pangs just got easier thanks to our friends at Rainforest. This simple, nutritious, family-friendly recipe will find favour with even the most discerning palate.
Rainforest Crispy Fish Sandwiches
Ingredients:
Sandwich
4 soft buns, halved
4 tbsp butter
8 Rainforest Breaded Fish Fillets
Slaw
1/3 cup mayonnaise
1 tbsp apple cider vinegar
1 tsp hot sauce (optional)
1 tsp pickapeppa sauce
1 tsp mustard powder
1 tsp onion powder
1/4 tsp smoked paprika
1/2 tsp salt
1/2 tsp white sugar
Black pepper to taste
2 tbsp chopped cilantro
2 cups shaved purple cabbage
2 cups shaved green cabbage
1 cup grated carrot
Method
1. With an air fryer set to 375ºF, place the Rainforest frozen breaded fish fillets on the tray, making sure they’re not overlapping. Airfry for about 15 minutes or until crisped and golden and golden brown, flipping halfway through.
2. Brush the middle of the buns with butter then toast until golden brown.
3. Mix all of the slaw ingredients in a bowl except the cabbage and carrot.
4. Once the sauce is well combined. Add the cabbage and carrot and toss well.
5. To assemble each sandwich, place two fillets on each of the bottom buns then top with equal amounts of the slaw, then the top buns.
