SALMON SUSHI CUPS
Ingredients:
1 cup dry sushi rice, prepared according to package direction
12 squares of nori (3 regular-sized sheets each cut into 4 pieces)
For the salmon
4 Rainforest Salmon Fillets, skin removed and fillets cut into bite size pieces
1 tsp garlic powder
1 tsp onion powder
1/2 tsp white sugar
1 tbsp soy sauce
1 tbsp sesame oil
For the topping
Chopped scallion
Sesame seeds
Sriracha mayo
Method
1. Add all of the salmon ingredients to a bowl and set aside to marinate.
2. Once the rice is cooked and slightly cooled, spray a muffin pan with non-stick cooking spray.
3. Preheat the oven to 400°F.
4. Press one nori square into each muffin mould followed by a spoonful of cooked rice and some of the marinated salmon.
5. Once all 12 have been assembled, bake for 15 minutes.
6. After baking, top with chopped scallion, sesame seeds, and sriracha mayo.
7. Serve warm or room temperature.
