Rainforest Caribbean Delivers Elevated Flavours at the Observer’s Table Talk Food Awards

Rainforest Caribbean delighted the senses at the recent 26th staging of the Jamaica Observer Table Talk Food Awards, with the inimitable Jacqui Tyson, of From Thought to Finish caterers, curating a delectable menu showcasing the brand’s growing range of products in elevated and innovative dishes, all served from a chic Studio Duo-designed lounge.

Widely regarded as “the seafood authority”, the brand lived up to its reputation with standout dishes such as Coconut Shrimp, Ginger Scallion Salmon and an impressive sushi spread — all so well-received that guests returned for second and third helpings! Patrons also had the chance to cool down with Rainforest’s refreshing fruit bars and a selection of cocktails crafted with frozen fruit — the perfect complement to the evening’s vibrant flavours.

Rainforest offered a sneak preview into upcoming product launches. One crowd favourite was the tender, slow-cooked goat meat, cleverly served in a flavour-packed taco. Another highlight was the soon-to-be-released frozen ackee, featured in an ackee and salt fish sushi roll. Other menu items included Ackee and Salt fish, Grilled Salmon, Spicy Tuna, and Dynamite Rolls at the sushi bar. Grilled Beef Tenderloin with chimichurri and béarnaise sauce and succulent leg of lamb, slow-roasted and infused with rosemary confit garlic at the ‘Hot Off The Grill’ station. And, Conch Pumpkin Soup, Mussels in White Wine, Ginger Scallion Salmon, Coconut Rum Flambéed Shrimp, Seachuterie board, Smoked Salmon, and Pepper Shrimp at the ‘Off The Hook’ station.
