What to prepare to satiate those hunger pangs just got easier thanks to our friends at Rainforest. Here is another simple, nutritious, family-friendly recipes that will find favour with even the most discerning palate.
Rainforest Fish Tacos
Ingredients
For the Fish
1 pack Rainforest Breaded Fish Tenders
3 tsp salt
Coconut oil for deep frying
4 taco-sized flour or corn tortillas
For the Sauce
1 cup vanilla yogurt
1/2 cup scallion, chopped
2 to 3 tsp hot pepper sauce (optional)
For the Salad
1/2 purple cabbage, thinly sliced
1/2 cup cilantro, chopped
1 tbsp lime juice
1 cup red sweet peppers, minced
Method
1. Mix sauce ingredients in a medium sized bowl and refrigerate until used.
2. Using a deep pan, heat up the coconut oil.
3. Carefully add the Rainforest breaded fish tenders to hot oil. Cook until golden brown and crispy, 4 to 5 minutes.
4. Drain on paper towels; sprinkle with kosher salt. Repeat process with remaining fish.
5. Combine cabbage, sweet pepper and cilantro in a bowl and toss in lime juice.
6. If desired, heat tortilla shells in a hot frying pan (no oil).
7. Assemble tacos and serve while hot.
