Recipe Corner…. Rainforest Mini Corn Dogs
What to prepare to satiate those hunger pangs after the passage of Hurricane Melissa, just got easier thanks to our friends at Rainforest. This simple, nutritious, family-friendly recipe will find favour with even the most discerning palate.
Ingredients
1 pack Rainforest Festival Mix
2 tins Rainforest Vienna Sausages
Coconut oil for deep frying
1 cup of water
1/2 cup all-purpose flour
1 tsp nutmeg
14 small skewer sticks

Method
1. In a large bowl, mix the Rainforest Festival mix, water and the nutmeg. The nutmeg is subtle but really enhances the flavour of the batter. Stir together until the flour disappears. Add more water if needed to keep a thick yet pourable batter.
2. Remove Rainforest Vienna Sausages from the tin, pat dry and insert a small skewer stick, then roll in flour, make sure to shake off excess flour. This helps the batter to stick better to the sausages.
3. Get your saucepan, heat your oil, pour batter in a tall glass and dip the floured sausages in, coating it all over. Gently but quickly lower each corn dog one-by-one into the hot oil, then deep-fry the corn dogs at 350ºF for 3 minutes, until the outside shell is golden and crisp. You can do this either in a dedicated deep fryer, or in any kind of saucepan.
4. Serve the corn dogs alongside some ketchup, mustard, mayonnaise or your favourite condiments.
