What’s your earliest memory of Kingston?
I’m from Trelawny so it would be when I got my first job at La Roose at 15 years old, walking into the restaurant and falling asleep waiting on my boss who came over to wake me up.
What would you do if you were mayor of Kingston for a day?
Try and get people to work together and have mutual respect for each other.
What’s your advice for a first-time visitor to Kingston?
Some people wrongly portray Kingston as a place with lots of vultures. My advice would be not to buy into that and enjoy Kingston for what it is.
What’s your middle name?
Roy.

What was your last bit of retail therapy?
Buying Ralph Lauren polo shirts and shoes at Harrods in Central London.
What are your favourite home comforts?
After a long day at work, turning on my home cinema, relaxing in the sofa and putting my legs up.
What cologne are you currently splashing?
Hermès.
What’s the best thing about being a chef?
Finishing a meal that pleases everyone.
And the worst thing?
When you’ve done your best preparing a meal and someone is having a bad day and turns out to be a pain in the ass.

Slovakia, Italy, the Czech Republic, and Austria… I mostly travel in Europe.
What upsets you?
Bullying.
Share some of your new projects with us.
Working with the Food Network on a documentary we just filmed in Jamaica; exploring the possibilities of opening a restaurant in Kingston; contemplating filming a reality show here to give talented Jamaican chefs the opportunity to work at my restaurant; and I’m working towards getting two more Rosettes for my restaurant in the United Kingdom to be a Michelin Star establishment. Also, I’m negotiating for my restaurant to be franchised in Europe.
