Put aside the ordinary and make a scrumptious meal or dessert this Easter

EASTER is here! Fun, laughter and entertainment is exactly what you need to have a good time, right? Did you forget about food? Put aside the ordinary bun and cheese and let’s make a scrumptious meal and dessert instead.

Hop on the ‘Healthy Food Train’ as it moves through your homes and communities with delicious and exciting meal plans for you and your family.

A healthy meal is a start to a better life; it is a new journey to living with grace and moving with speed. You will begin to glow, feel rejuvenated, and your bones will be strengthened. It is time to really start living and doing more. Push up, sit up and live up!

The meal train is ready; are you? Hop on board. Toot, toot!

Tuck Me Garden Salad

Ingredients:

1 head medium lettuce

1 medium carrot shredded or cut to choice

1-2 medium tomatoes (cut to choice)

1 small cucumber (ringed or cubed)

1/4 cup shredded cabbage

1/4 cup beet (optional)

1/4 cup raisin or grapes (optional)

1/4 cup blue cheese (optional)

2 slices tilapia, seasoned and baked (or your choice of protein)

3-4 tbsp dressing

Directions

1. Wash all vegetables and prepare according to recipe.

2 Add veggies in desired design to salad bowl.

3. Add cooked tilapia

4. Add dressing of choice to salad then toss and serve with your choice of protein.

Brownie Smiley Cheesecake

Ingredients:

4 eggs

¼ cup butter, softened

½ cup sour cream

2 teaspoons vanilla

½ cup cocoa powder

½ teaspoon baking powder

¼ teaspoon salt

1/4 cup honey

½ cup sugar-free chocolate chips

Cheesecake topping

8 ounces cream cheese, softened

1 egg

¼ cup honey

½ teaspoon vanilla

Directions:

1. Preheat oven to 350 degrees F.

2. In a standing mixer, add the first five ingredients and blend on high until combined well. In another bowl, whisk together the other four dry ingredients.

3. Pour this into the wet ingredients and blend on high until combined.

4. Gently stir in the chocolate chips.

5. Grease an 8 by 8 baking dish.

6. Pour half the brownie batter into the pan. Set aside remaining batter.

7. Prepare the cheesecake topping using a stand or hand-held mixer to blend until smooth.

8. Pour half the cheesecake topping onto the brownie batter in the pan.

9. Pour the remaining brownie batter over the the cheesecake topping.

10. Finish with remaining cheesecake topping.

11. Use a butterknife to swirl the batter and cheesecake topping together.

12. Decorate with optional chocolate bar chunks, or chips if desired, before baking.

13. Bake 30-35 minutes until toothpick in centre comes out clean.

14. Allow to cool for 15-20 minutes before slicing. Add melted chocolate to finish product.

NB: Optional topping: 2 ounces sugar-free or 85 per cent dark chocolate candy bar or chips. You can also decorate with whipped topping.
