‘A piece of cake’

Sandals South Coast pastry chefs elevate wedding cake creations with Caribbean-inspired designs

SANDALS South Coast’s pastry chefs recently completed a transformative wedding cake training exercise, designed to enhance their craft and infuse their creations with the vibrant essence of the Caribbean.

The specialised training session focused on innovative designs, unique flavour profiles and personalised touches, ensuring couples who choose the resort for their special day enjoy a wedding cake that is as memorable as the picturesque Jamaican backdrop.

“From intricate flowers, to bold designs that echo the beauty of the Caribbean, the pastry team is ready to take wedding celebrations to the next level. Our goal is always to create unforgettable moments for our couples,” said Valecia Galbraith, weddings manager at Sandals South Coast.

“Sandals Resorts always focuses on evolving and our offerings follow this belief as well. With the launch of our new wedding product ‘Aisle to Isle’, it was only fitting to improve the look of our cakes. I like to say we have a weakness for sweetness and the skills of the pastry team will allow us to bring to life these unique love stories in the form of cakes that embody the charm and romance of Jamaica,” added Galbraith.

The resort’s Executive Chef Ricardo Smith expressed his pride in the team’s growth.

“We believe in not only continuously innovating to exceed our guests’ expectations but also developing our team members so they exceed their biggest dreams.

“This training exercise has inspired our pastry chefs to think outside the box and create cakes that are not only aesthetically pleasing, but also accurately capture a true reflection of the vibrant Caribbean spirit that they want to share with their guests,” said Smith.

Expressing her enthusiasm for the recent training, Pastry Chef Sheryl-Lee Ralph said: “This experience has been incredible. We’ve learned so much about blending traditional techniques with modern design trends, all while staying true to the flavours and the aura of the Caribbean. I can’t wait to surprise our couples with cakes that truly represent their love and their destination wedding.”
