Honey Mustard Salmon Fillets

Cook time: 10 minutes
Serves 2-4
Ingredients:
• 1 Bag Rainforest Salmon fillets
• ¼ teaspoon salt
• ¼ teaspoon black pepper
• ¼ teaspoon smoked paprika
• 3 tablespoon oil
For the sauce:
•¼ cup mustard
• 1 cup honey or agave
• 4 garlic cloves, shredded
• 1 tablespoon soy sauce
• 2 tablespoon thyme leaves
• ¼ cup scallion, finely chopped
Method:
1. Defrost and pat dry the salmon fillets.
2. Season fillets with salt, black pepper and smoked paprika.
3. Heat oil in a pan and sear the salmon on both sides about 1-2 minutes per side.
4. Remove the salmon and set aside on a plate.
5. Pour off the excess oil.
6. To the pot add honey or agave, shredded garlic cloves, soy sauce, thyme leaves and scallion.
7. Cook until the sauce is rich and thick, about 5 minutes of continually stirring. (It should not be runny but a little sticky.)
8. Place the salmon back into the pot and baste with sauce on all sides.
9. Serve hot.
