A Delectable Back-To-School

The school bells are ringing, and it’s time to trade in those summer vibes for the excitement of a new school year. Whether you’re prepping lunches, seeking quick dinners, or looking for delicious and nourishing options, Delect has got your back. We’re diving into the kitchen with Chef Lisa Brady Gabay from Select Deli at Select Grocers Manor Park, bringing you two fantastic family-friendly recipes – Corned Beef Callaloo Quiche and Veggie-Stuffed Corned Beef Pita Pockets. These recipes feature the timeless household favourite and Jamaican classic: Corned Beef. Not only are these meals speedy and hassle-free, but they also strike the perfect balance between taste and nutrition, thanks to Delect’s low-sodium corned beef.

Pair these back-to-school delights with a refreshing glass of Ginger Melon Refresher or Lemonade Mango Punch made using Delect concentrates. These bursts of flavour, crafted from authentic Jamaican natural juice and extracts, transform everyday beverages into extraordinary thirst-quenchers. Plus, they’re loaded with essential micronutrients and vitamins, ensuring your family gets the boost they need.

Delect Corned Beef Callaloo Quiche

Step 1: The Crust

Ingredients:

8 oz all-purpose flour

2 oz vegetable shortening

2 oz butter/margarine

1 tsp salt

5-6 tablespoon cold water

Method:

Combine all ingredients except water.

Blend until it resembles coarse breadcrumbs.

Add water and mix together until it forms a dough ball.

Rest covered in the refrigerator for 25-30 minutes.

Dust board and roll out dough and place in a pie pan/dish.

Step 2: Callaloo Prep

Ingredients:

3 cups (approximately) callaloo, chopped

6 cloves garlic

1 onion, minced

1 sprig thyme

Hot pepper to taste

1 pinch black pepper

1 tablespoon cooking oil

Method:

Steam callaloo until just cooked. Allow to cool.

Step 3: The Quiche

Ingredients:

2 cups shredded cheddar cheese

4 eggs

¼ cup heavy cream

Pinch of black pepper

Step 4: Corned Beef:

1 large tin Delect Corned Beef

1 small onion

1 tablespoon Delect Fish & Meat Sauce

1 tablespoon Delect Ketchup

Method:

Combine the corned beef ingredients, cook up and cool.

The Quiche

Spread Delect Corn Beef to the bottom of the crust, add callaloo spread evenly then sprinkle cheese all over.

Beat the eggs and add heavy cream, pour over the callaloo top with cheese.

Bake at 350o F for 30 minutes or until done.

Delect Corned Beef Veggie Pita Pockets

Ingredients:

Shredded lettuce

Shredded carrots

Sliced grape tomatoes

Sliced red onions

1 tin of Delect Corned Beef

Pita bread

Method:

Cook up Delect Corned Beef with your favourite seasoning.

Cut pita pockets into halves.

Warm or toast pita pocket halves.

Stuff with cooked Delect Corned Beef.

Top with vegetables.

Delect Ginger Melon Refresher

Ingredients:

7 oz Delect Fruit Concentrate Ginger Beer

40 oz watermelon

32 oz ice cubes

Method:

Blend in a blender for a minute to serve.

Delect Lemonade Mango Punch

Ingredients:

7 oz Delect Fruit Concentrate Lemonade

32 oz ice cube

32 oz chopped mango (Julie or Bombay)

Method:

Blend in a blender for a minute to serve
