Curried crab and dumplings
Ingredients:
6 medium crabs, cleaned and washed
2 pkts Maggi Tastemakers Season-Up all purpose
2 tsps. Garlic, minced
4 leaves Shadon beni/cilantro, minced
1 medium onion, chopped
3 pimento/seasoning peppers, chopped (optional)
2 tbsps curry powder
1/2 cup water
1 tbsp Vegetable oil
1 cup Maggi Coconut Milk Powder mixed with 2 cups warm water
Dumplings:
2 cups All purpose flour
1 tsp salt (optional)
3/4 cup water
2 litres water (for boiling dumplings)
Method:
Season crabs with Maggi Season -Up, garlic, shadon/beni/cilantro, onions, and pimento peppers.
Mix all ingredients listed for dumplings, to form soft dough and set aside
Mix curry powder and 1/2 cup water to form a paste.
In a large saucepan, heat oil. Cook curry paste in oil for 3 minutes. Add Maggi coconut milk and bring to a boil.
Add crabs and cover pot. Boil for 8 minutes. Then reduce heat to a simmer for 25 minutes.
Form dumplings into desired shape.
Add to boiling water. Cook for 10-15 minutes until dumplings float.
(Note shape and size of dumplings will affect cooking time).
Quick Tip. For a one pot dish, add dumplings to the curried pot in step 5 just before the heat is reduced and allow to simmer for 20-25 minutes or until dumplings have cooked.
