Summer Snaxx
The end of another summer is fast approaching and back to school preparations are underway. So, while there may not be plenty of time to be having fun there will always be time to eat.
The teenAGE Observer’s Summer Snaxx feature allows for cooks from all areas of expertise to get creative in the kitchen using simple ingredients found in every home.
Here we’ll highlight a few ‘quick fixes’ that can be prepared in those instances when you just want something to munch on during the day (or night).
Today’s feature:
Microwave Quiche
Items needed: knife, cutting board, microwave safe dish, whisk/fork,
cheese grater
Recipe:
1 egg
1/2 a small onion
1 small tomato
1/2 a sweet pepper
1/2 a scotch bonnet pepper (optional)
a dash of salt and black pepper
1 slice of bread
1/4 cup of cheese
1 1/2 tablespoons of milk
1 teaspoon of melted butter
NB: you can get creative with the seasonings if you like
Method 1:
1 Break the slice of bread into pieces until you get about a 1/8th of a cup.
2 Prepare the seasonings by dicing the tomatoes, onion and peppers.
3 Grate the cheese and set aside.
4 Crack the egg into the microwave safe bowl add the melted butter, milk, salt and black pepper and whisk the mixture until fully incorporated
5 Sprinkle the bread pieces then the seasonings into the egg mixture and allow to settle, do not stir.
6 Sprinkle the cheese on top of everything then place the mixture into the microwave. Microwave for 1-2 minutes or until the mixture has cooked thoroughly.
7 Use a dish towel to remove the bowl from the microwave.
8. Allow the quiche to cool down a bit then enjoy, while it is warm
NB: If you wish to remove the quiche from the bowl, run a butter knife around the edges of the quiche then turn onto a plate.
