Aram Zerunian has been in the hospitality industry for over 30 years. He initially started his career in food and beverage and catering. Fine foods and wines have always been a passion for him and travelling around the world over the past 40 years, he has enjoyed some of the finest food establishments in Europe, Asia, North and Latin America as well as the Caribbean. His philosophy on food is that you have to try everything and anything at least once, no matter how exotic it might be.
Ten years ago a group of friends would meet religiously on Saturdays by the seaside to have fish over drinks. The spot is nestled along the Sandy Bay main road at the seaside, just metres away from the Tryall property. Wesley Chambers, or Pachie as he is known, was the chef on these frequent outings. The friends would buy the fish from the local fishermen and cook on spot. Then one day while Pachie was serving, his friend exclaimed, “charge us for the fish, man!” The dream came alive and that’s where the business idea came from.
The spot, now known as Pachie’s, opens Monday, Thursday, Friday and Saturday and serves fresh seafood. Patrons select their catch of the day and then watch as it is prepared right before their eyes. Meals are served with fried breadfruit, bammy and festival. A specialty of Pachie’s is the Hanover breadfruit that is sliced, soaked in salt water and then fried. This is tasty and crisp, unlike the traditional way of roasting the breadfruit and then frying it. The fish is often cooked in foil on a grill. It truly tastes like a steamed fish (not roasted) and that is what makes Pachie’s so special.
The service is very good and so is the price. We ordered two fried parrot fish, 1 steamed lionfish, 1 lb steamed conch, 1lb grilled conch with sides, as well as drinks and paid $6,600
