Recipe Corner – Rainforest Seafoods
Spicy Coconut Red Curry Shrimp
Ingredients:
1 pack Rainforest Seafoods P&D Shrimp
1 tbsp Rainforest Seafoods lemon seafood spice
1 tbsp vegetable oil
1/4 tsp garlic (minced)
3 tsp red curry paste
1/4 tsp ginger (minced)
1 cup coconut milk
1 tsp brown sugar
1 small bell pepper (diced)
1 small onion (diced)
1/4 cup escallion (green parts only)
2 tbsp cilantro (chopped)
1 tbsp coconut flakes (toasted)
Method:
Pre-season Rainforest Seafoods P&D shrimp with Rainforest Seafoods
lemon seafood spice.
Place medium sauté pan on medium flame and add oil.
Add onion, ginger, garlic and curry paste.
Sauté for 1 minute, stirring lightly to avoid burning.
Add shrimp and sugar, then coconut milk.
Allow to come to a gentle boil for 3-5 minutes depending on shrimp size.
Add cilantro and escallion.
Let simmer for 2 minutes.
Remove and serve.
Garnish with coconut flakes.
