Stirring The Pot @ The Pork Pit
The Pork Pit has been around since 1978 and, like the imposing cotton tree that dates back centuries, is an integral part of the MoBay landscape. Under new management since 2002 it remains the preferred destination for lovers of chicken — factor in almost every Jamaican — and the other white meat — factor in as many even amidst the loud protestations and the fact that the pork is always finished first!
“Chicken remains our number one seller,” according to co-owner Linda Leslie, who, along with jerk specialists Mark Stewart and Romo Foster, was kept busy Sunday afternoon parcelling chicken, pork, sausages and barbecue ribs. “Immediately after taking over The Pork Pit we sought the help of jerk specialists from Portland. The feedback was that the meats were too peppery. We scrapped that option and created our own flavour profile and have not looked back. Indeed, both the hot pepper and barbecue sauces are made in-house and receive rave reviews from locals and visitors alike.” Count our Table Talk Food Awards judges amongst the many!
