Ham Bone Gungo Peas Soup

Time to take out that ham bone and enjoy a hearty bowl of soup.

 

Ham Bone Gungo Peas Soup

Ingredients:

1 large ham bone

2 cans gungo peas

Water

3 cloves garlic, minced

2 large onions, diced

2-3 stalks celery, diced

2-3 carrots, diced

Ground provisions (yellow yam, Irish potato, pumpkin, corn)

1lb pumpkin, peeled and diced

3 stalks escallion

Thyme

Flour

2 tsp crushed pimento

1 whole Scotch bonnet pepper

1 Pack MAGGI Vegetable Soup mix! Vegetable cube

2 Pack MAGGI Cock Soup mix with pumpkin

MAGGI Hot Pepper sauce (optional)

 

Method:

1. Start by soaking the ham bone in a large pot of water for a few hours or overnight. This will help to remove any excess salt and make the soup more flavourful.

2. Next, drain the water from the pot and add fresh water to cover the ham bone. Bring the mixture to a boil, then reduce the heat to a simmer and let it cook for about 1 hour.

3. While the ham bone is cooking, prepare the vegetables. Dice the large onions, a few stalks of celery, scallion, pumpkin, and a few carrots into small pieces.

4. Once the ham bone is tender, remove it from the pot and let it cool slightly. When it is cool enough to handle, remove any remaining bits of meat from the bone and set them aside.

5. Add the diced vegetables and gungo peas to the pot with the ham bone and seasonings, bring the mixture to a boil. Reduce the heat to a simmer and let the soup cook for an additional 30 minutes, or until the vegetables are tender.

6. Stir in the reserved bits of ham meat and any additional seasonings, such as thyme, scallions, crushed pimento and both MAGGI soup mix packets.

7. Serve the soup hot, garnished with a sprinkle of chopped scallions and a drizzle of MAGGI hot pepper sauce, if desired. Enjoy!
