Oasis on Tap (Part 1)
Rare is the bar that doubles as a genuine garden oasis. Yet William Denton has achieved precisely that. As managing director of Willy’s Thatch Roof and Cool Out Spot, located at 115a Molynes Road, he has transformed the establishment into something truly unique. When Style Observer Gardening (SOG) visited, it was instantly clear why this hidden gem has become a much-loved chill spot.
Stepping into Willy’s Thatch Roof and Cool Out Spot feels like discovering a hideaway. Framed by cascading water features, the garden boasts a vibrant mix of palm trees, crown of thorns, hibiscuses, and bromeliads. In place of fleeting seasonal flowers, an arrangement of diverse greenery defines the space, creating a serene retreat for patrons to socialise, enjoy great food, and unwind.
Denton’s home sits adjacent to the business, housing a private garden where bougainvilleas and palm trees thrive alongside sweet peppers, Scotch bonnet peppers, tomatoes, and an ackee tree — all serving to emphasise his garden-to-table ethos.
Heavily influenced by his mother, Denton has fused his lifelong passion for gardening into a space entirely his own.
“My passion for flowers started at a very tender age through my mother, who was a lover of flowers. Over time, that love became my own passion,” Denton shared with
SOG. “My garden is my safe space, a place where I feel her presence, even though she passed away years ago.”
Prominent among his favourites are the palm trees, which are absolutely essential as summer approaches.
“The palm trees are my favourite because they provide both coolness and warmth. The love and passion I have for gardening have been the key factors in caring for these plants,” Denton said.
