Williams teased the senses, opening with peppered shrimp with pumpkin romesco and oxtail ragout with parmesan arancini callaloo chimichurri. The indulgence continued with a pimento beef medallion paired with yam truffle risotto and charred corn succotash, alongside an ackee mousse and tomato tartlet. The finale came in the form of crispy curried goat croquettes finished with a tamarind glaze.
