Renowned chef Conroy Arnold, known for his impressive culinary journey through some of New York’s most elite kitchens and iconic Jamaican resorts, has opened a less-than-year-old venture that is elevating the dining experience in his locale. Welcome to 511 Conroy’s Plate, located in the charming coastal town of Oracabessa, St Mary. This innovative dining concept invites guests on a personalised, five-course culinary adventure crafted uniquely for each diner.
“I like to cook food that I understand and people understand. Even though it’s elevated, you can identify it, I know this flavour or I know what callaloo is. It’s just that we’ve added pasta and made it into a ravioli,” Arnold explained.
Arnold’s rise in the culinary world is marked by notable stints at top-tier establishments including the world-famous Nobu in New York and the Ritz-Carlton in Cayman. These experiences polished his techniques and deepened his appreciation for meticulous, imaginative cuisine. Yet, his heart has remained tied to Jamaica, where he has brought his refined skills to celebrated spots such as Golden Eye and Hermosa Cove, blending local flavours with global sophistication. Along the way, due to a slight speech impediment, The Trelawny native picked up the moniker the Stuttering Chef and has parlayed that in his successful branding.

“My cooking is more freestyle, as that makes me happy. I like to grab ingredients and play around. Taking our local ingredients and adding a little twist. So, my creations are hardly ever repeated; they’re one-of-one and like a magical unmasking,” Arnold added.

For Thursday Food Arnold served up a puréed vegetable soup for the first course made with beans, pumpkin and potatoes. A second course of pickled beets, tomatoes, avocado and basil rounded out the salad. The tasty and creamy callaloo Ravioli was selected for the third course. A pasta dish followed with penne, potatoes with thinly sliced and smoked Pancetta beef. A delectable local surf and turf with lobster and tenderloin with steak and butter sauce served as the penultimate course. The dessert consisted of pineapple jam, house vanilla ice cream and pumpkin pie drizzled with chocolate syrup.
