Hi-Lo Cabbage & Salt Fish Special
Serves 6-8
Ingredients
1 lb cabbage, shredded
1/2 lb broccoli, cut into small florets
& slice the stem
1/2 lb cauliflower, cut into small florets & slice the stem
1 large carrot, sliced into strips
1/2 lb salt fish
1 onion, chopped
2 cloves of garlic, crushed
1 tomato, chopped
1 sweet pepper, sliced into strips
1 scotch bonnet pepper
1 tablespoon vegetable oil
Method:
Boil salt fish for 15 minutes to remove excess salt and then drain water, and remove scales and bones.
Heat the oil in a large pan, then sauté the onion, tomato, sweet pepper and garlic for 2 minutes.
Add the rest of ingredients, including the salt fish, add a bit of water if needed, reduce flame, cover and cook for 5 minutes on low – medium heat. Do not overcook the vegetables.
Serve immediately.
