Chief Executive Officer of Global Outsourcing Solutions and former president of the Montego Bay Chamber of Commerce and Industry Davon Crump has been championing a healthier approach to living. Indeed, he took the decision three years ago to change his approach to food and lean towards a healthier and more nutritional diet by researching better food choices and substitutes for more popular but less nutritional ingredients. This led to him refining his kitchen skills.
Not wanting to be left out of the Easter festivities, Crump has created a no-sugar, oats-based Easter bun which, although flourless and sugarless, is absolutely delicious! Crump naturally recommends vegetarian cheese to go along with it.

Flourless, Sugarless, Non-Traditional Easter Bun
Ingredients:
3 1/2 cups of rolled oats
3 eggs
4 ripe bananas (mashed)
1/2 cup pure maple syrup
2 cups chocolate almond milk
1 cup natural chocolate peanut butter
1 cup dried fruits (raisins and prunes) soaked in fruit wine or rum
1/2 tsp baking soda
1 tbsp vanilla
1 tsp mixed spice
1 tsp cinnamon
1 nutmeg (grated)
A dash of sea salt
Method:
• Start by preheating oven to 410˚F then grease bun tin and set aside.
• Combine all ingredients and mix until batter forms. A portion of the fruit can be blended and added to the mixture.
• Pour the batter into the bun tin so that it is approximately 3/4 of the way full. Place it in the oven and bake for 45 – 50 minutes. Baking time may vary depending on your oven. Allow to cool for 15 to 20 minutes then enjoy with your vegetarian cheese.
Note: You can substitute honey for the maple syrup, but you would have to use less honey, like 1/3 cup, since it tends to be sweeter than maple syrup.
