Bun & Fish From Mama Vena’s Kitchen
Easter Bun Recipe2 oz margarine
Ingredients:
1 bottle stout
1/2 cup wine
tbsp vanilla
2 tbsp browning
2 oz egg
1/2 lb brown sugar
1 lb flour
1 tsp salt
1 tsp nutmeg
1 tsp cinnamon powder
1 tbsp baking powder
1/2 tsp mixed spice
1/4 cup cherries, chopped
1/4 cup raisins soaked in stout
Method:
Melt margarine and add stout, wine, vanilla, browning and egg in a mixing bowl and mix together. Stir in sugar until dissolved. Combine dry ingredients then add raisins and cherries. Combine wet and dry mixtures and mix well. Scrape mixture into 12” x 4” x 3” loaf pan already greased and lined with wax paper. Bake in pre-heated oven at 350F for an hour or until inserted toothpick comes out clean. Cool and glaze. Glaze mixture: Bring to boil 2 teaspoons of honey, two tablespoons of water and 1/2 tablespoon of butter. Allow to cool and then brush on the surface of the bun. Serve with sliced cheddar cheese.

I baked my first Easter bun as a teen… It didn’t turn out so well as I added too much liquid and it came out looking like a pudding!
I bake because… baking floats my heart! I love baking and I’m passionate about it. Most of all though, I enjoy seeing the happiness on my customers’ faces and being the centrepiece of their celebrations
The most challenging part of Easter baking is… measuring every single ingredient accurately. It takes a lot of time and patience.
