Honey crystallisation offers new value-added opportunity for local processors
The natural crystallisation of honey, often mistaken by some consumers as evidence of added sugar, could present an untapped value-added opportunity for Jamaica’s beekeeping and honey-processing industry, according to apiculture specialist Hugh Smith.
Smith, chief plant protection officer in the Ministry of Agriculture’s Apiculture Unit, told the Jamaica Observer in a recent interview that rather than treating crystallised honey as a defect, local beekeepers and processors could transform its semi-solid, “brick-like” state into new products.
“When you have crystallised honey in Europe it is a blessing,” Smith said, pointing to overseas markets where crystallised honey is deliberately processed and sold as a value-added product.
He explained that in a number of overseas markets processors often use a stick blender to break down the crystals into smaller particles, producing a smoother, spreadable product known as cream honey.

Creamed honey, which is marketed alongside traditional liquid honey, often emerges as a preferred choice in some markets due to its thicker consistency which makes it easier to spread on toast and other pastries without dripping.
Based on other cultures, turning standard raw honey into gourmet flavoured or whipped creamed honey could also allow beekeepers and producers to command higher retail prices for the product.
Locally, honey in its liquid form often serves multiple practical purposes across food, medicine, and manufacturing. As a culinary sweetener it is used in baking, hot drinks, and speciality infused variations.
For home remedies it is applied as a balm for soothing colds, dressing minor burns, and healing skin irritations. As a value-added it is also used by entrepreneurs to manufacture organic body washes, hair care treatments, and natural mosquito repellents.
Smith, underscoring Jamaica’s need to widen usage particularly in its crystallised form, believes this will create additional product lines for beekeepers and processors while potentially reducing consumer rejection of the product because of its sugar-like appearance.
Crystallisation, said to be one of the most natural things honey can do, even in its purest form, is the process by which liquid honey transitions to a semi-solid or solid state with a grainy or cream like texture.
The process occurs because honey, as a supersaturated sugar solution, contains a high concentration of sugars relative to its water content. As a result, the proportions of its two principal sugars — glucose and fructose — often play a major role in determining how readily it crystallises.
The balance between the sugars, when influenced by the floral sources from which bees collect nectar, also allows different plants to produce nectar with varying chemical compositions.
“If there is a higher glucose level, then honey will be more likely to crystallise than if you have a high fructose level,” Smith said.
As a result, some varieties of honey, the expert said, may also crystallise relatively quickly, while others remain liquid for considerably longer periods.
Smith pointed to temperature and moisture content as important factors in determining the rate of crystallisation.
The presence of microscopic particles, he further said, could also accelerate the process, particularly in raw and minimally processed honey. This, as natural materials such as pollen and tiny wax particles provide surfaces around which glucose crystals can begin to form.
“Once you have those in the honey, it will be more likely to crystallise,” Smith said.
Though crystallisation has become a source of concern for some consumers, who mistake the grainy-like particles for added sugar or other forms of adulteration, Smith said the process is not to be viewed as spoilage.
Stressing that crystallisation does not mean honey has gone bad or that its quality has necessarily been compromised, he said the product can be returned to liquid form.
“Crystallised honey can be reversed to liquid form by placing the container with honey in a pot with warm water and that will reverse the process. Some people will also put the honey outdoors in a warm place which could also revert it to liquid,” Smith said.
The apiculture specialist further said that while crystallisation by itself is not evidence of adulteration, maintaining the authenticity of the natural sweetener remains an important issue for the industry.
Through a recent programme with the Association of Caribbean Beekeepers Organisations, Smith said greater training and support are being offered to the local beekeeping industry to help producers identify and address issues concerning adulterated or fake honey.
“As a result of this regional partnership, over time we’ll know exactly what our true and authentic Jamaican honey is and what it is really made of,” he said.
