Shan’s Pan-Seared Salmon
Golden, crispy skin and tender, flaky salmon finished with garlic butter and fresh rosemary make this an elegant dish that’s surprisingly simple to prepare. Perfect for a quick weeknight dinner or a meal to impress.
Ingredients
• 10 oz fresh salmon fillet, skin-on and deboned
• ¾ tsp salt
• ½ tsp freshly ground black pepper
• ½ tsp garlic powder
• ½ tsp onion powder
• ½ tsp smoked paprika
• 1 tbsp olive oil
• 3 tbsp butter, divided
• 2 cloves garlic, thinly sliced, divided
• 4 sprigs fresh rosemary
Method
1. Using a sharp knife, lightly score the skin of the salmon, making shallow cuts about ½ inch apart.

2. Pat salmon dry with paper towel. Season both sides with salt, black pepper, garlic powder, onion powder, and smoked paprika.

3. Heat a large skillet over medium heat. Once hot, add the olive oil.

4. Place the salmon skin-side down in the skillet. Gently press with a spatula for a few seconds to prevent skin from curling.
5. Cook for 2 minutes, then carefully flip the salmon and cook for another 1-2 minutes until lightly browned.
6. Flip the salmon back so the skin is facing down. Add 1 tablespoon of the butter, half of the sliced garlic, and rosemary sprigs to the pan.

7. Reduce heat to medium-low. Continue cooking for about 5 minutes, occasionally spooning the melted butter over the salmon until it is cooked through and flakes easily with a fork.
8. Remove the salmon from the skillet and serve immediately.
